Job Summary:
Cardno Emerging Markets USA, Ltd. (Cardno) is currently seeking a Short-Term Professional Cake Decorating Instructor (STTA) for the USAID-funded EMPOWER Private Sector activity in Kosovo. It is anticipated that the assignment will require up to 15 days of the expert’s engagement.

Job Description:
Cardno is currently seeking a Short-Term Professional Cake Decorating Instructor (hereinafter referred to as “Instructor”) for the USAID-funded EMPOWER Private Sector activity in Kosovo. EMPOWER is designed to increase competitiveness in growth-ready sectors and facilitate inclusive private sector job creation. The sweet production sector in Kosovo has grown in recent years, and further skills capacity enhancements on advanced cake decoration techniques may help generate further diversification and increased value added.

Position Objective:
Under the leadership of EMPOWER’s Technical Advisor and the relevant Component Lead, the Instructor will draft and deliver a training program in professional cake decoration (herein after referred to as “training program”). The training program will be delivered to a select number of Kosovo sweet producers. Hands-on concrete demonstration techniques will be a critical component of the course content.

Job Description:
A. Specific Tasks:

The Instructor will:

• Conduct site visits to a number of interested Kosovo sweet producers to scope their individual cake decorating needs (the list will be finalized based on EMPOWER support)
• Based on the scoping of needs, deliver demonstration-based practical training on advanced cake decoration techniques to selected Kosovo sweet producers (the training will likely be delivered in-company and may include, but not be limited, to the following):
  • Advanced decorating cake decorating techniques may include (a) butter cream piping (i.e. preparing and using buttercream icings; pressure control piping; basic cake borders; intermediate buttercream piping; and floral piping skills); (b) royal icing, rolled fondant and pastillage (i.e. elementary flooding techniques, flowers and lace; advanced techniques such as brush embroidery and string work; working with rolled fondant, and using it to cover a styrofoam cake and boards; different methods for preparing pastillage and use to create plaques); (c) rolled fondant and hand modeling (i.e. ruffling, drapery and ribbons, including a variety of different writing techniques and modelling using marzipan); (d) sugar flowers and airbrushing (i.e. preparing a wide assortment of sugar paste flowers; introduction to basic equipment needed; coloring techniques along with petal dusting and floral arrangement; introduction to airbrushing techniques for flower preparation and airbrush designs); and (e) other advanced techniques as relevant.
  • Tailored cake decorating techniques for the production of cakes and other sweet products at an industrial/mass scale, including preservation techniques for long-distance transportation

Position Requirements:

1. Relevant professional certification
2. Proven experience as professional cake decorator
3. Proven experience in designing and delivering coaching and training programs
4. Effective communicator
5. Knowledge of Albanian language is an asset
